450g self raising flour
2 spoons baking powder
1 tbsp brandy
2 drops vanilla essence
1 tsp cacao
1 tsp melted chocolate
Preheat the oven to 175C/ 350F/ Gas mark 4
Mix the butter and the sugar until fluffy. Add the egg yolks and keep mixing.
Slowly add in the flour in rotation with the milk, vanilla, baking powder and brandy.
Use the egg whites to make a meringue mixture. Once formed, add it into the main bowl.
Add in half of the mixture into the baking tray.
With the other half, add in the chocolate and cacao and mix.
With a spoon, swirl the chocolate mixture around the tray.
Bake for 55 minutes.
Extra tip – in Cyprus we eat this cake alongside our morning/ afternoon/ evening coffee!
