Lemon Drizzle Cake


225g caster sugar
225g butter
275g self raising flour
2 tsp baking powder
2 lemons zested (just the zest)
4 eggs

2 lemons juiced
175g sugar

1. Preheat the oven to 180C / 160 Fan/ Gas Mark 4

2. Mix all the ingredients together in a bowl and pour into baking tray

3. Bake for 45-50 minutes

4. Leave to cool for 15 minutes and pour over evenly the lemon juice mixture while the cake is still warm

5. Leave to cool in a dry place and serve
